Chef's Corner from Executive Chef John Schulze: "The late summer harvesting of local raspberries is plentiful along with the last of the blackberries. We have been making summery berry crisp with the majority of them. This week we will switch to a frangipane and raspberry tart. Water melons and cantaloupe will be local for the next couple of weeks also. The heirloom tomatoes are great this week as usual. We are using them on every fresh tomato dish that we can. Do not be surprised if you bite into one when you get a hamburger or on one of our other sandwiches. We are also using these heirloom tomatos in the tomato and lobster bisque.
Little neck clams are going to be in this week and we will use them in various pasta and appetizer dishes. The first clam bake will be September 10th. I have also started working with other ingredients for our fall menu items. The fall squashes, apples, cabbages, Swiss chard, sage and cauliflower are just a few local produce that will feature and used on the new fall menu changes." - Chef John
