Greetings from the Kitchens of the Galaxy!!
I found myself going outside several times today to take in the sunshine. What a beautiful day....almost makes you think that spring is around the corner!
As a matter of fact, Farmer Jerry and I are already planning what fresh produce will be coming your way as the season continues.
Fresh, healthy and beautiful vegetables, greens and tomatoes grown just for the Galaxy. One thing that will be extra special will be the Caprese Salad with Jerry's amazing heirloom tomatoes. I cannot wait!!
Before we get to "new business" I would like to thank all of you that made the Galaxy your choice for the Valentines weekend. I hope you had a chance to see that 32 ounce Porterhouse steak that we featured throughout the weekend.
This is the perfect steak for two; one side is tenderloin(or filet Mignon) and the other is a strip steak that melts in your mouth. Rest assured that it will be making a return visit when we visit Omaha or Chicago on our 13 City Culinary Thursday Night tour.
Speaking of the Thursday 13 City stop, next Thursday will be Memphis....and that means barbeque!
Brisket, ribs, porkchops....as many surprises as I can come up with...will be waiting for you at the Galaxy on Thursday the 24th.
Finally, I am very happy to say that I have made some wonderful friends since I have become your Executive Chef.
There are many of you that call me from the kitchen to request something special or just to say hello.
Nothing makes me happier than to take personal care of each and every one of our wonderful friends.
The biggest compliment that you could give to me and my staff would be simply this:
"Angus, cook for us."
This means that I know a little bit about you and you believe in what I do.
There is no greater honor for a Chef.
