Chef's Corner from Executive Chef John Schulze:
"We are now getting into the beginning of the fall baking type squash; one of my favorites is the buttercup. We will use this particular squash in a sauce for the squash ravioli again this year. This Friday night will be our first of four consecutive Friday clam bakes using local sweet corn and other vegetables on the clam bake menu. Remember, only about two more weeks of local heirloom tomato remain." - Chef John
